Vallformosa Fest Brut Organic Cava, Penedes

A big name in Cava, Vallformosa has been making Spain’s signature fizz since the 1930s, and they’ve racked up plenty of awards along the way. And yet the team – headed by winemaker Xavi Pons – doesn’t rest on its laurels. Since the early 2000s they’ve been focused on both environmental and social sustainability, using fewer natural resources and supporting a network of 500 long-term local growers. The attention to detail hasn’t shifted, and all wines are aged for longer than the legal requirement, bringing more complex flavour to your glass. This is delicate, balanced fizz with bright notes of apple, pear and citrus.
